Maple-Miso Salad

This fresh, simple salad paired with delicious maple-miso dressing is perfect for those nights when you want something quick but full of flavor. (Leave out the avocado for a no-fat dish. I personally love the combination of creamy avocado with this sweet, salty, savory dressing, though.)

Maple-Miso Dressing

  • 1 tbsp maple syrup

  • 1 tsp chickpea miso paste

  • 2 tsp coconut aminos

  • 1/4 tsp garlic powder

  • squeeze of lime juice

  • water to thin

Salad Suggestions

  • 1 head romaine lettuce

  • 1 cup diced tomato

  • 1 chopped green onion

  • 1 sliced serrano pepper (if you like spice)

  • 1/2 cup sprouts of choice (I like alfalfa)

  • optional: 1/2-1 avocado (use more less depending on preferred fat intake or omit)

Prepare your salad, whisk your dressing ingredients together, combine, and dig in!

Avo-Cheezy Sauce

This creamy & cheezy recipe is awesome for noodles (I like to use spiralized raw zucchini or cucumber), as a dip with cucumber slices, inside of wraps, or on top of tacos and nachos! The possibilities are endless.

Avo-Cheezy Sauce

  • 1/4-1 avocado (use more or less depending on preferred fat intake)

  • 1/2 peeled zucchini

  • 3 tbsp nutritional yeast

  • 1 clove garlic (or 1/2 tbsp garlic powder)

  • squeeze lemon juice

  • 1 tsp chili powder

  • 1 green onion‬ stalk

  • optional: 1/2 tsp red chili flakes
