This fresh, simple salad paired with delicious maple-miso dressing is perfect for those nights when you want something quick but full of flavor. (Leave out the avocado for a no-fat dish. I personally love the combination of creamy avocado with this sweet, salty, savory dressing, though.)
1 tbsp maple syrup
1 tsp chickpea miso paste
2 tsp coconut aminos
1/4 tsp garlic powder
squeeze of lime juice
water to thin
1 head romaine lettuce
1 cup diced tomato
1 chopped green onion
1 sliced serrano pepper (if you like spice)
1/2 cup sprouts of choice (I like alfalfa)
optional: 1/2-1 avocado (use more less depending on preferred fat intake or omit)
Prepare your salad, whisk your dressing ingredients together, combine, and dig in!
